Dad’s Better-For-You Chocolate Mousse Tartlet

LG Health Executive Chef Ed Long created this deliciously healthy, low fat, low cholesterol tartlet for the hospital patient menu on Father’s Day. He’s sharing his recipe so you can enjoy any day of the year! 

INGREDIENTS

  • 1-½ ounces (1-½ squares) unsweetened baking chocolate
  • ⅔ cup reduced fat or low fat milk (1 or 2%)
  • 2 tablespoons plus 1 teaspoon liquid egg substitute
  • ¾ cup granulated sugar substitute (for example: Splenda, it should measure cup for cup with sugar)
  • ½ cup unsweetened cocoa
  • 1 teaspoon cornstarch
  • 5-½ tablespoons vanilla low fat or nonfat yogurt
  • 1-½ cups sugar-free whipped topping
  • 8-3” graham pie shell/tart shells

INSTRUCTIONS

  1. Place baking chocolate, cocoa, milk, egg substitute, sugar substitute, and cornstarch in a bowl that is fitted over a pot of simmering water (or use a double boiler/bain-marie). Heat over medium heat until chocolate melts and mixture begins to thicken. Watch carefully and stir frequently so chocolate does not burn. Continue to cook over medium heat stirring constantly until mixture thickens to a pudding consistency.
  2. Remove from heat and place bowl in a shallow ice bath to quickly cool (do not allow water to seep into chocolate mixture). When cool stir in yogurt and half of whipped topping, mix well and stir in remaining whipped topping. Serve in parfait cups and top with 1 teaspoon of whipped topping. Can be kept covered and refrigerated for 24 hours before serving.
