Southwestern Salmon Salad

Leslie joined us in the demo kitchen at our Lebanon facility to show an audience of community members how easy it is to prepare salmon in a healthy, flavorful way. Salmon is a great source of protein and omega-3 fatty acids. Omega-3s help maintain a healthy heart and can improve inflammation from arthritis and asthma. 

INGREDIENTS

  • 6 servings, 12 oz. salmon; skinned
  • 4 tablespoons BBQ sauce
  • ¾ cup sliced grape tomatoes
  • 1 medium avocado - diced
  • ¾ cup corn kernels
  • ¾ cup canned black beans (rinsed)
  • 4 cups fresh baby spinach
  • ½ cup salsa
  • ½ cup nonfat plain Greek yogurt
  • 6 lime wedges

INSTRUCTIONS

  1. Place salmon filets on greased baking sheet. Sprinkle lightly with ground black pepper. Top with BBQ sauce. Bake 350° for 14 minutes. Allow salmon to cool and refrigerate (may be made ahead and kept in refrigerator overnight).
  2. In separate bowl, combine black beans, corn, sliced tomatoes, diced avocado, and spinach. Toss with salsa. Using a fork, cut salmon in to bite sized pieces and toss with salad ingredients.
  3. Place salad in serving bowls and garnish with a dollop of plain nonfat Greek yogurt and a wedge of lime.
