Preparation time: 15 minutes
Baking time: 45 minutes
Total time: 1 hour

INGREDIENTS

  • 4 cups (1 lb.) of raw (unroasted) nuts (pecans, almond, walnuts or a combination)
  • ½ cup brown sugar
  • ½ cup granulated sugar
  • ½ teaspoon salt
  • 1 tablespoon ground cinnamon
  • 1 large egg white (yolk is removed)
  • 1 teaspoon water
  • 1 teaspoon vanilla extract

INSTRUCTIONS

  1. Preheat oven to 300°F. Line a rimmed baking sheet with parchment paper.

  2. Place nuts in a large bowl.

  3. Combine egg white, water and vanilla extract in small bowl and whip with a fork until frothy, or foamy, about one minute.

  4. Add the egg white mixture to the nuts and stir gently until the nuts are covered with the mixture.

  5. Mix together the sugars, salt and cinnamon in a small bowl. Add to the nut mixture and stir until the nuts are coated with the sugar-cinnamon mixture.
