Jan Bergen’s Baked Oatmeal

I love that I can wake up in the morning and have a fresh, warm batch of baked oatmeal within 40 minutes.

The best thing about this recipe is that you can add whatever fruit or nuts you prefer, taking full advantage of what is in season and what you like most. I love to continuously try new combinations.

It also is essentially a guiltless recipe. The ingredients are actually good for you. Enjoy!

INGREDIENTS

  • ½ cup canola oil or applesauce
  • ⅔ cup honey
  • ⅓ cup maple syrup
  • 2 eggs
  • 3 cups old-fashioned oats
  • 2 teaspoons baking powder
  • 1 cup skim milk
  • Optional mix-in (about 1 cup total): raisins, frozen blueberries, pecans, almonds and/or chopped, unpeeled apple

INSTRUCTIONS

  1. Preheat oven to 350 degrees.
  2. Combine oil, honey, maple syrup and eggs. Add all other ingredients and mix well.
  3. Pour into a greased 8- or 9-inch square baking pan. Bake for about 30 minutes, or until the top looks nice and golden.
  4. Serve topped with vanilla yogurt or milk.
