1912 Chicken Croquettes

1912 chicken croquettes

Who doesn't appreciate a little comfort food on occasion? This recipe was taken from the Lancaster General Hospital Women's Auxiliary Societies Cookbook, published in 1912. We originally created and shared these tasty Chicken Croquettes in 2018 as part of the hospital’s 125th anniversary.

INGREDIENTS

  • 1 lb. finely chopped cooked chicken
  • ½ teaspoon pepper
  • ½ tablespoon salt
  • ½ tablespoon butter
  • 2 eggs
  • ¼ pint cream
  • Splash of lemon juice
  • ½ teaspoon onion juice
  • Cracker crumbs (approximately 10 crackers)

INSTRUCTIONS

Combine chicken, pepper, salt and butter. Mix with 1 egg, cream, lemon juice, and onion juice. Roll croquettes until they are shaped in the form of little cylinders. Then roll in beaten egg and cracker crumbs. Fry in hot lard* until brown. Makes 8 croquettes.

*While we kept the recipe as originally published, consider substituting olive oil.
