The Lighten Up Lancaster County Coalition invites the community members to submit their favorite healthy recipes to be included in a new healthy cookbook.

After collecting recipes, the coalition will publish a new cookbook featuring the community’s diverse, healthy recipes.
Recipes that feature fruits and vegetables, whole grains, beans and lentils, seafood, lean meats and herbs and spices are encouraged. Main dishes, appetizers, sides, snacks, drinks and desserts are welcome. 

An editorial board with representatives from the Spanish American Civic Association (SACA), Lancaster General Health, Lancaster Central Market, Church World Service, Fountain Avenue Kitchen, and Cause & Effects Fitness will select the final recipes to appear in the book.

Along with community recipes, the cookbook will profile the recipe authors, include global food traditions, and feature practical tips on shopping, cooking, and eating on a budget.

“Our goal is to create a cookbook that inspires people to have the confidence to cook healthy, whole foods at home,” said Brenda Buescher, Lighten Up Lancaster coordinator. “We are excited to collect recipes from the community and reflect the diverse cultures represented in Lancaster County.”
