Pumpkins and butternut squash are vegetables in the winter squash family. Because pumpkins are often used as an ingredient in baked goods, it’s easy to overlook the fact that they are healthy. In addition to being a source of fiber and potassium, winter squash are rich in antioxidants like beta-carotene and vitamins C and E. When using canned pumpkin, look for brands with no other ingredients added, or try cooking with a fresh, whole pumpkin (and don’t forget to save the seeds for roasting in the oven). 

Cruciferous vegetables like broccoli, cauliflower, Brussels sprouts and kale are rich in folate, vitamins C, E, and K, and fiber, as well as phytonutrients that may help reduce inflammation and cancer risk. Visit your local farmer’s market for the freshest ingredients.
